For Kai Woltmann, cheese is a passion that started in his home country of Germany, with a cheese-maker who lived across the road producing Tilsit. Kai and his wife Annie are excited that after a long period of planning and building, the Second Mouse Cheese Company is in full swing.
The Henri (above) ~ A beautiful semi-hard, Swiss-style cheese with a sweet, nutty flavour. Named after Kai's father, a mild and gentle man.
The Frieda ~ A punchy washed rind with a creamy texture and a thin russet coloured rind that has a moderate piquancy that intensifies as she ages. Named after Kai's mother, a strong and confidant woman.
The Roobie Blue ~ A piquant blue mould with a creamy texture accented by fruity savoury notes.
